Cauliflower Soup, Spanikopita, Zucchini and Rice

We’re on day nine of eating a vegetable-centric diet and the recipes continue to amaze.  Today Ali made an absolutely amazing cauliflower soup with a chopped parsley garnish, spanikopita with spinach, leeks, onion, garlic and feta and a zucchini and rice casserole.  All divine.

I’m still not completely sure what the motivation for eating all of these vegetables is and its not as easy as I thought it would be.  I would be lying if I said I wasn’t craving meat now and then and that I wasn’t hungry a lot more often.  But at the same time, I can feel the difference in my body and I’ve even lost a few pounds in just over a week.

A slightly edited list of things we’ve been eating include:

  • PBJ sandwiches
  • Orzo salad
  • Artichokes (soon from our garden!)
  • Wraps made of vegetables, beans and lavash bread
  • Smoothies (for breakfast)
  • Quiche
  • Fennel salad
  • Corn, cabbage and cilantro salad
  • Grilled flatbread with caramelized onion, bleu cheese, grapes and cilantro


There are a LOT of vegetarian recipes out there.  And a lot of weird people.  Vegetarians have a wide array of motivations for eschewing meat and from my brief research into the topic, the majority tend to come off very self-righteous and preachy.  Don’t even get me started on the vegans and raw food people…


Will I make it through the rest of the month?  Probably not without a bit of meat here and there, but I can say that my diet has definitely shifted away from meat as the anchor of a meal.
